Banana Bread Muffins
Wondering what to do with your overripe bananas? Turn them into the perfect afternoon treat with our easy to make banana bread recipe or swap the loaf tin out for a muffin tray and you have banana bread muffins.
Ingredients
- 3 overripe medium bananas, mashed
- 1 x 125g Forticreme Complete (Banana)*
- 2 eggs
- 1 ½ cups oats
- 1/4 cup honey
- 1 cup desiccated coconut
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions
- Pre-heat oven to 170°C.
- In a blender combine all ingredients. Blend until ingredients are well combined. Try not to over blend; some texture from the coconut is ok.
- Pour into a lined loaf tin or distribute evenly between 8 muffin cups.
- If using loaf tin bake in oven for 35-40 minutes or until golden and cooked through. If using a muffin tray bake in oven for 20 minutes or until golden and cooked through.
- Allow to cool before serving.
Notes
Mix in 1/2 cup pitted dates (chopped) before baking for added sweetness.
